With the luxury to lazily roll out of bed this Monday morning, we decided to start the week off right with a little decadence- Freshly picked strawberry and chocolate chip pancakes with strawberry-lemonade mimosas. Add a poolside view and Monday never looked so good! Oh the summertime.
For the cocktails, we squeezed as many fresh-from-the-tree lemons as were needed to yield about about 3 cups of juice. Then we ran the mixture through a fine mesh strainer to remove any lingering bits of seed and pulp, while finally adding 1 cup of sugar.
Next, we sliced the strawberries lengthwise and put them into the lemon juice mixture, reserving about 1/4 of what we had cut. These we pureed with a fork, then also added to the lemon mixture.
To complete, we filled champagne flutes about halfway with the strawberry-lemonade mixture, then covered to the brim with bubbly!
